The **Yaxell Ran 36056, 3-piece knife set** is a practical and stylish set consisting of a universal knife, a Japanese santoku and a knife sharpener. The perfect gift for someone who loves sharp kitchen knives! 

A santoku is the Japanese version of the chef's knife. The relatively small blade is perfect for finely cutting vegetables, meat, fish, onion, garlic and, of course, different types of herbs. Thanks to the universal knife's small 12 cm blade and light weight, it is perfect for finely chopping an ingredient or quickly opening packaging. 

The Yaxell pull-through sharpener is a knife sharpener with two ceramic wheels with a grain size of 400 grit. One for each side of the edge. This sharpener can, of course, be used with all Yaxell kitchen knives, but other kitchen knives can also easily be sharpened with this sharpener. With the exception of serrated knives like bread knives.

## How to use the Yaxell pull-through sharpener

Make the knife wet and pull it through the sharpener as straight as possible. Before first use, we recommend passing the blade through the left slot at least 20 times and through the right slot at least 20 times as well. This is because the edge needs to take over the sharpening angle of the sharpener. Then, for each subsequent use, it is enough to pass the blade through each slot 10 times. If the knife doesn't become sharper this is probably because the edge does not have the right sharpening angle yet. Then it is basically a matter of pulling the knife through the sharpener more often. Rinse the knife well and dry it with a piece of cloth.

## Yaxell Ran blade

The blade is made from 69 layers of damascus steel and a core of Japanese VG10 steel hardened up to 61HRC. VG10 is known to be very hard and can also easily be sharpened. The damascus steel creates a beautiful contrast of light and dark lines that run along the entire length of the blade. This combination of the type of steel and the finish ensures that the Yaxell Ran knives are efficient, but also look amazing.

## Yaxell Ran handle

Yaxell uses micarta for the handles. Micarta is a material comprised of linen, impregnated with an epoxy resin. This makes it a very strong material. It can handle its own and withstand water. Micarta is known to offer a lot of grip. Even when wet. The oval and round shape of the handle offers enough grip, making it very comfortable to use.
