The Kai Seki Magoroku Shoso deba is a large and solid Japanese kitchen knife. The deba was originally designed for filleting and preparing meat and fish. The blade is thicker than an average kitchen knife, allowing you to cut through small bones, ligaments and tendons without damaging the knife's edge. This knife is sharpened on one side while the other side is hollowed out. This ensures that meat and fish do not stick to the blade while you are cutting.
