This **Wüsthof Classic 20 cm half crop chef's knife** is similar
to the 'regular' Wüsthof Classic chef's knife 20 cm. The
main difference between the two is the crop. While
other chef's knives have a crop that runs towards the heel of the
blade, this knife is enhanced with a half crop. The advantage is that
you can use the entire blade as you use the knife. In addition,
you can easily sharpen the knife because you won't hit
the crop. The half crop and the somewhat thinner blade ensure that this
chef's knife is lighter than its counterpart.

## Wüsthof Classic blade: razor-sharp stainless steel


The blade made from chromium-vanadium steel (X50CrMoV15) is forged from one solid piece of steel. It is sharpened according to Wüsthof’s PEtec technology. This means that for each blade a sharpening angle is determined with the help of a computer. Afterwards it is precisely sharpened on a wet sharpening stone. After thorough inspection each knife leaves the production line, ready for a life of intensive use.


Wüsthof processes the steel in a specific way to make sure it has a high hardness of 58 Rockwell. As such the knife retains its sharpness for a really long time. However, if you notice that the knife is not as sharp as it used to be, all you have to do is move it over a honing steel. The result is a razor-sharp knife that is amazing to use.


## Wüsthof Classic handle: sustainable and hygienic


This knife is a combination of a forged blade and an ergonomic handle made from black POM, a very sustainable type of plastic. The handle can withstand all substances you find in the kitchen. The handle was traditionally and seamlessly riveted to the blade with three rivets. As such dirt can never accumulate in between the blade and the handle. The crop protects your fingers from unnecessary contact with the edge. What more could you possibly ask for?


## Wüsthof Classic: the classic Wüsthof collection


The Classic is the most extensive Wüsthof collection on the market today. It is comprised of over 80 different kitchen knives, amongst which different sizes of chef’s knives, bread knives and carving knives. Because this collection has the most versions of all possible knives, you can easily comprise your own perfect knife set. A knife set with a knife block of chef’s case is, of course, also an option.

Léger, robuste, versatile et tranchant.
J'hésitais longtemps avec leur modèle santoku, qui est très tranchant, mais pas adapté à ma façon de hacher les herbes.
Celui-ci sort de sa boîte extrêmement tranchant et il me faut un temps d'adaptation pour ne pas me couper. 
Je le trouve parfaitement adapté à mon travail. C'est à dire un usage intensif en cuisine professionnelle, sans se tracasser de l'oxidation de la lame ou de sa résisantce sur des légumes durs.
Cependant, je trouve que pour le prix, une protection de lame aurait été la bienvenue.

Nooit een groot liefhebber van Wüsthof geweest, heeft alles te maken met de balans: zware heften, handig voor wie pompt vanuit de schouder, maar anders alleen maar lastig. Ook de hoge punt ligt mij niet echt. Dan de Cordon Bleu: stukken lichter, iets lagere punt, neutrale gewichtsverdeling. 
Kon hem krijgen voor een habbekrats, dus heb toegeslagen.
Mooi afgewerkt mes. Raar dat het wordt afgeleverd met een 'wire edge', een bijzonder type braam bovenop de vouw. Iemand heeft behoorlijk zitten pitten daar in Solingen. Nu, dat is met een steen gauw verholpen.
Dan het eerste gebruik in de keuken. Ondanks alle marketing van de Petec technologie gaat het veel en veel te zwaar door harde groenten als winterpeen en knolselderie. 
De reden: veel te dik direct achter de vouw. 
Is eenvoudig te verhelpen met een enkele slijpsessie. Vanaf dat moment een prima mes, dat zijn scherpte ook goed houdt op kunststoffen planken. Maar niet iedereen is er tuk op om een gloednieuw mes gelijk met slijpstenen te lijf te gaan.
