This **Zwilling Twin 1731 santoku** combines the most exceptional materials and a stunning design with perfect cutting properties. The knife was designed by famous Italian designer Matteo Thun.

## Ebony wood handle

Thun used oiled ebony wood for the ergonomic handle. This is a heavy, dark type of wood that is becoming increasingly rare. The handles were designed as such to function as an extension of your hand. The wedge on the bottom of the handle supports a professional grip, with the thumb and index finger on the blade.

## Top-quality Cronidur 30 steel

The blades of the Zwilling Twin kitchen knives are made from top-quality Cronidur 30 steel. This type of steel is mostly used in aerospace engineering and is characterized by an impressive toughness and corrosion-resistance. By combining these characteristics with Zwilling's Friodur ice hardening technique this blade is razor-sharp and sustainable.

The knives are forged with precision according to the Zwilling Sigmaforce method. This means that the blades are forged from one piece of steel with the help of a machine, leaving you with an exceptionally solid, balanced and flexible blade. With the help of laser technology the knives are enhanced with a razor-sharp edge, after which they are polished by hand by expert sharpeners.

Het Zwilling/Henckels Twin 1731 santokumes 18 cm.
Het mes heeft een totale lengte van 30.5 cm. en weegt daarbij 178 gram. 
Een lichtgewicht, zeker voor messen van Duitse makelij.
In het midden over de rug gemeten is het mes 2mm in dikte.
Iets wat voor dit type mes van Japanse makers wel overeen komt, al zijn ze er ook nog wel dunner.
Qua gebruikte materialen en afwerking verwijs ik graag naar mijn review over het koksmes van deze serie.
Daarbij wil ik gelijk opmerken dat dit mes in vergelijking daarbij toch heel anders aanvoelt.
Het heft is beduidend kleiner en dunner uitgevoerd en meet 10.6 cm in lengte.
Het is maximaal 24mm. in hoogte en 15 mm. op z'n dikst.
Het kosmes daarintegen is 28.8 mm. hoog en 18.5 mm. dik.
Dit maakt voor mij dat het koksmes net prettiger / zekerder in de hand ligt.
Dit heft is ontworpen voor een beduidend kleinere hand.
Als ik deze twee verder met elkaar mag vergelijken is de boog die het snijvlak beschrijft van het santokumes minder gelijkmatig.
De baan die het snijvlak van het koksmes beschrijft is goed uitgevoerd voor de wiegende snijmethode.
Vanaf de spitse punt loopt de ronding zeer geleidelijk over in een vlakker snijgedeelte, typerend voor een westers koksmes.
Het snijgedeelte van het Japanse koksmes is een rechter / vlakker mes waarbij de rug naar beneden toe de punt vormt.
Uitstekend voor mensen die een drempel hebben bij het hanteren van grotere messen en een angst hebben om per ongeluk ergens in te prikken.
Vanaf de punt is het snijvlak van dit mes de eerste vier cm. bijna recht.
Daarna begint de kromming redelijk snel en gaat dan vanaf de helft van het mes over in een baan die vrijwel gelijk is aan die van het westerse koksmes.
Bij het snijden van bijvoorbeeld tomaatjes kan deze ''hoek'' net even helpen om het velletje te doorbreken.
Door de eerder genoemde dikte van het mes snijdt het moeiteloos zachte fruitsoorten zonder deze te vervormen en hardere groenten gaan net zo makkelijk.
Ook dit mes heb ik onder een zeer kleine hoek geslepen met een serie Naniwa waterstenen. 
Bij dit mes uiteraard geen verdikte garde aanwezig, dus veel werkend mesgedeelte voor een relatief klein koksmes.
