The **Wüsthof Kitchen Surfer 5** is a razor-sharp Chai Dao knife. The Chai Dao is a traditional Chinese knife shape. Thanks to the lightly curved blade, the Chai Dao is perfect to cut, 'rocking' and chopping.

## Wüsthof Chai Dao blade: razor-sharp and stainless

The blade is made from chromium-vanadium steel (X50CrMoV15), and it is forged from one piece of steel. The knife is sharpened according to Wüsthof's PEtec technology. This involves using a computer to calculate the sharpening angle for each blade. The blade is then sharpened with laser precision on a wet sharpening stone. After thorough inspection, each knife leaves the production line ready for a long life of intensive use. 

The steel is processed by Wüsthof so that it has a high hardness of 58 Rockwell. This ensures that the knife stays sharp for a long time. But if it happens to become a bit duller, you only need to run it past your sharpening steel a few times. This results in a razor-sharp knife, which is a pleasure to work with.

## Wüsthof Chai Dao handle: durable and hygienic

This knife is a combination of a forged blade and an ergonomic handle made from black POM, an extremely durable type of plastic. This handle is resistant to all substances found in the kitchen. The handle is attached to the blade in the traditional manner, with three rivets, and of course seamlessly joined. As a result, no dirt gets between the blade and the handle. The bolster protects your fingers from unwanted contact with the blade. What more could a cooking enthusiast want?


**Please note**: this knife is not suitable for cutting bones. For this, please use a classic cleaver.
